The first dish that i want to highlight is the magical Chicken and Waffles from Bouchon. Sure the chicken isn’t fried, but its super moist and has the best crispy skin. The chicken is served with waffles cooked with chives in them and served with a bacon jus, and Tahitian vanilla bean butter. Its the perfect blend of sweet, savory and crunch.

Originally only served during brunch at the Las Vegas location, but is now being served at the Bouchon in  Beverly Hills. I still prefer eating it only in Las Vegas, as it gives me something to look forward to when headed out to the desert. Its not as cheap as the ones you can get at Roscoe’s or the like, but the quality of the ingredients and the care of the preparation makes it worth the $25 dish price.
